Pasta with fresh tomatoes and garlic

This pasta recipe is incredibly easy and very flavorful. If you’d like to switch things up a little, this is a light and fresh take on tomato pasta.

Ingredients

  • Pasta of choice (enough for about 4 people)
  • 2 cups fresh tomato,
  • 4 or 5 fresh parsley sprigs, chopped
  • 2 or 3 cloves garlic, diced
  • olive oil (2 Tbsp or so)
  • salt and black pepper, to taste

Instructions

Dice the garlic and cut the tomatoes into bite-sized pieces.

Add the olive oil to a pan and sautee the garlic. Once the garlic is cooked, but before it starts to brown, add the tomatoes, salt, and pepper.

Cook the tomatoes just until starting to soften up, remove the pan from the heat and add the chopped parsley.

Once the pasta has been boiled in salted water until desired tenderness, drain the water from it.

Add the pasta to the pan, stir it into the tomatoes and garlic and then serve.
