Anyone else really like broccoli rabe?
It makes a great addition to an omelette or frittata. Here’s an easy broccoli rabe frittata recipe: enjoy!

Ingredients
- 4 cups chopped broccoli rabe
- 1 clove garlic
- 2-3 Tbsp butter
- salt, to taste
- 1/4 tsp ground black pepper
- splash of water or broth
- 4 jumbo or 5 large eggs
Instructions
Stove temp: medium / medium-low
Wash the broccoli rabe and cut it into about 3 inch pieces, removing the fibrous ends of the stalks.
Cut the garlic into large slices and sautee in the butter. Once the garlic has begun to soften, add the broccoli rabe and stir into the butter. Add the salt and pepper, and cover.
Allow the broccoli rabe to cook until almost done, and then add the splash of water, if needed to keep the vegetables from getting crisp.
Once the broccoli rabe is tender, add the scrambled eggs. Cover after a couple of minutes and leave covered until fully cooked. Serve your frittata.
