Fennel has a delicate, aromatic flavor that works really well with tart tomatoes and apple cider vinegar.
This recipe is incredibly easy to put together. But, don’t let its simplicity deceive you: it’s a truly special dish and makes a light, healthy, and flavorful side.

Ingredients
- Equal parts: Florence fennel (finocchio)
- Equal parts: tomato (I used “sweet millions” tomatoes)
- salt
- black pepper
- oil (any mild flavored, liquid-at-room-temperature oil)
- apple cider vinegar (or vinegar of choice: wine vinegars would likely taste great, too)
Instructions
Cut the tomatoes into bite-sized pieces. Slice the fennel thin, and cut to desired length. Use the white bulb part of the fennel plant for this salad.
Add the vegetables to a bowl and pour in desired amounts of oil and vinegar.
Sprinkle salt and grind pepper into the salad and mix.
Serve with fennel leaves as a garnish.
