Here is a simple and tasty stir fry recipe for you! When I put this dish together I did not have a ton of vegetables on hand. This goes to show that even just a few fresh ingredients can come together into a wonderful meal.
- 1 shallot
- 1 onion
- 1 clove garlic
- 2 peppers
- about 2 lbs chicken, sliced thin
- 1 Tbsp olive oil
- 1 Tbsp butter
- about 2 tsp turmeric
- about 1/4 tsp ginger
- black pepper, to taste
- salt, to taste
- 1/4 cup white wine
Cut the onion and shallot into thin sections. Sautee these in the olive oil and butter, along with the garlic, roughly cut. Add the chicken, sliced thin, and continue to sautee.
Add the peppers, sliced long and thin, as well as the turmeric, ginger, salt and pepper.
Pour about 1/4 cup white wine into the pan and allow it to cook off.
Allow the stir fry to continue cooking until the meat is cooked and tender and the vegetables cooked as well.
Serve the stir fry together with rice of choice.
