This salad is very refreshing and also slightly sweet. I learned the recipe from a woman while I was staying temporarily in Belgrade, Serbia for a few weeks, although originally she had gotten it from a Polish lady. Now it’s yours, as well!
- yellow raisins
- lemon juice
Add about 1/2 – 1 Tbsp sugar to a bowl, squeeze in about 2-3 Tbsp fresh lemon juice and stir.
Grate one large carrot and 1 – 1 1/2 large apples. Set aside in a separate bowl.
Add the desired amount of raisins to the lemon juice and sugar. Allow them to marinate in the juice for a few minutes.(I use about 1/4 cup of raisins for this amount of apple and carrot.)
Add the raisins and juice to the carrot and apples and stir until fully coated.
