There wasn’t much time to make dinner today, and I started preparations quite late. Not knowing how long my daughter would hold out before being desperate for food, I needed to come up with a quick dinner idea.
I made a variation on a dish I created a few years back. It is a simple meal, and quite quick. It could be prepared as a one-plate meal, if you consider the potatoes to be a vegetable (as I found them to be considered in Italy, for example). Here are the details, in case you’d like to make it, too.
Ingredients
- Purple and white baby potatoes
- ground beef
- sour cream (or cream cheese)*
- salt and black pepper
- olive oil
- fresh dill
Preparation
Cut the baby potatoes into bite sized pieces and boil in salted water until tender.
Sautee the ground beef together with black pepper in a pan until cooked.
Place the potatoes on a plate, and add a drizzle of olive oil.
Dish some ground beef on top, add the sour cream (or cream cheese), salt (according to taste), pepper, and a sprinkle of fresh dill.
*Today I prepared this dish with cream cheese, as I had no sour cream on hand. I think I prefer the sour cream, but the cream cheese was quite nice, too.
